Vankaya Vepudu – Eggplant Stir fry
A family favorite especially during festive meals. Eggplants aka Vankaya hold a special place in a typical Andhra meals especially on festive days or wedding feasts. For Ugadi our lunch spread would have been incomplete without this subtle sweet-flavored stir fry. Simple to prepare, the key to this recipe is a blend of ginger-garlic-fresh coconut which imparts a nice aroma and flavor.
Vankaaya Vepudu Recipe
Prep & Cooking: 30 mts
Serves: 3-4
Cuisine: Andhra

Ingredients:
1/4 kg purple brinjals, cut into quarters
1 large onion chopped
big pinch turmeric pwd
1 tsp coriander pwd
1/4 tsp cumin pwd
1 tsp red chilli pwd
1 1/2 tbsps oil
salt to taste
For seasoning/poppu/tadka:
1/2 tsp mustard seeds
10-12 curry leaves
Make a paste:
6-7 garlic cloves
small ginger piece
1 1/4 tbsps grated fresh coconut
1 Heat oil in a cooking vessel, add the mustard seeds and let them pop. Add the curry leaves and onions and saute for 3 mts.
2 Add the quartered brinjals and stir fry them for 5-6 mts without lid. Stir fry in between to ensure they don’t burn or stick to the pan. Add the ground ginger-garlic-coconut paste and combine well. Add salt and turmeric pwd. Saute without lid for 4-5 mts till the rawness of the paste disappears. Add coriander pwd, cumin pwd and red chilli pwd and combine.
4 Place lid and reduce flame and cook till the brinjals have cooked completely and turned soft. Turn off heat. The stir fry will appear almost like a gooey mass (mudda kura).
5 Adjust salt and serve with hot rice.

Clean Up those Digital Images: Yes, you had a lot of fun in college and you loved showing it off to the world. You have drinking/smoking pictures with your friends on all social networking sites, you may have made absurd racist jokes on Twitter and your facebook profile is like a college fun diary which has a mention of everything (nasty-fun things) you did in the past four years. Clean all that up. The world is becoming more and more tech-savvy and your prospect employer is not likely to have been left behind. Interviewers try and do a background check and tend to look you up on all social networking sites. Keep in mind that your future boss is unlikely to want to hire someone who portrays a too casual or bohemian an image. What was cool in college is not so cool at the workplace.

Tell me about yourself: Remember people, the guy sitting in front of you is not someone you met on in a coffee shop, if all goes well, he will be your boss/employer. So, when you are asked ‘tell me about yourself’ you make sure you come with an answer that covers the following

• 3 accomplishments, if they are related to the industry, it’s going to be an advantage. (Remember, I changed 7 girlfriends in 4 years of college is not an accomplishment!) 

• A few personality traits. (Team player and love to be busy would be nice to mention.) and

• Why they should hire you? (Showcase your passion and enthusiasm for the role and let your tone and body language complement your enthusiasm.)
If you are applying for a job in the IT industry, tell them that you like reading about the current industry trends, that you are always on a look out to learn something new and you could also mention some DIY (do-it-yourself) projects.

What is your Greatest Strength: Prepare for this one before the interview. List your strengths and try and find ways to back those traits. For example: You are a punctual person then you may want to say something like, “I don’t like carrying stale baggage, therefore I try and finish my work before time. I have submitted all my projects before the deadline date and have never been late for a class.” You could also mention something like, “I have leadership qualities, I was captain of the college football team and lead a team of four in a paper presentation competition at the university level.”
But make sure whatever you say is true; lying in an interview is a complete no-no.


What is your Biggest Accomplishment: The interview realizes you are a fresher and does not accept you to boast about how good you are at the work that you haven’t even started, so relax. If this question is thrown your way, you should respond by saying something like, “I’m at the start of my career and feel that my accomplishments and achievements are ahead of me, but I am really proud of my involvement with a XYZ project. I contributed as a __ and learnt a lot in the process.” By doing this, you make your interviewer think that you are a realistic person and by stating what you learned, you are highlighting a positive quality about yourself.

Don’t argue: The person sitting in front of you is not your college professor. He does not know you for the past four years and he is going to outright reject you if you keep negating his ideas/ viewpoint. We don’t say that interviewers are always right and yes, they may be wrong, but you are in no position to argue with them. Present your point of view like a professional and if you disagree with theirs so be it. You should try and understand their perspective and know that what he says is backed by years of experience; who said

  1. You must have a Mission Statement.  What’s your real motivation behind your trading?
  2. You must spell out your trading/investing Goals and Objectives.  You cannot get from A to very easily unless you truly know where B is.
  3.  You must spell out your Trading/Investing Beliefs and Market Beliefs.  Please remember this very important statement, “You cannot trade the market.  You can only trade your beliefs about the market.”  Therefore, it’s a very good idea to identify your beliefs about the market first. 
  4.  Spell out your exact Trading Strategies.  How do you go about analyzing the market and what are the key things you look at in your market analysis?  What trade set-ups do you use before entry? What are your timing signals for market entry?  What is your catastrophe stop loss?  Where and when will you take profits?  Will you use a trailing stop?  Will you scale into the market?  What exactly is your trade management system once you’re into the trade?    
  5.  What are your Position Sizing Strategies?  This is part of money management and is very important in reaching your trading goals and objectives in terms of profitability. 
  6. What are your typical Psychological Problems in following your trading plan?  What is your plan for psychological management for dealing with these problems?
  7. What are your Daily Trading Procedures?  What should you be doing on a daily basis, not only to become organized, but to become methodical in everything you do as a trader, on a day-to-day basis.
  8. Do you have an Education Plan to Help Improve Yourself on a continuing basis?  If not, you should have one.  Like anything else in life, you need to be continually working on yourself to become better and better.
  9. What is your Disaster Plan?  What can go wrong, and how will you deal with each item?
  10. What is your Planned Income and Budget for Trading Expenses?  This is pretty simple and straightforward; write down everything you can think of and try to be as realistic as possible.
  11.  How do you Prevent Trading Mistakes and Avoid Repeating Them… if they occur?  Really sit back and think about this and write down any and all mistakes that you might make during your trading.  Once you do that, come up with a solution to each potential mistake that you might make so you don’t allow that to happen.
Having a ‘Trading Business Plan’ of this nature is so very important that I rank it among the top requirements for all traders and investors to complete and have.  If you don’t already have one similar to this, I highly suggest you start developing such a plan.  I can guarantee that you will become a much better and more prepared trader.
